This recipe is an adaptation of the famous ‘Bibim Dangmyeon’ you can find in Busan, presented as a delightful stir-fried version with chives. The chewy glass noodles combined with fragrant chives and a sweet and spicy sauce create a dish that’s perfect as a side dish for rice or as a savory snack. It’s easy to make with simple ingredients, so give it a try!

Main Ingredients

  • Glass noodles (dangmyeon) 1 handful (approx. 100-120g)
  • Chives 2 handfuls (approx. 100g)
  • Green onion 1/2 (finely chopped)
  • Minced garlic 1 tsp
  • Water 1/2 paper cup (approx. 100ml)
  • Sesame seeds, a pinch (for garnish)

Seasoning

  • Soy sauce 1.2 Tbsp
  • Sugar 0.5 Tbsp
  • Gochugaru (Korean chili flakes) 1 Tbsp
  • Salt 1 tsp

Cooking Instructions

Before you start cooking, soak the glass noodles in cold water until they are fully rehydrated. This step is crucial for stir-fried dishes, as pre-soaked noodles will have a better chewy texture and cook faster, making the entire process much smoother. (Soak for at least 30 minutes).

Wash the green onion thoroughly, pat it dry, and then finely chop it. Using chopped green onions allows their aromatic flavor to infuse beautifully into the oil as it cooks, adding depth to the overall dish.

Heat a pan over medium-low heat and add cooking oil. Add the chopped green onion and minced garlic. Sauté for about 1 minute, stirring constantly to prevent burning. This initial sautéing of garlic and green onion releases their fragrance, which will enhance the flavor of the entire noodle dish.

Once you can smell the savory aroma of the green onion and garlic, add the soaked glass noodles to the pan. Stir-fry for about 1 minute to lightly coat the noodles with the oil. Then, pour in 1/2 paper cup (about 100ml) of water, cover the pan with a lid, and let it simmer for about 3-4 minutes until the glass noodles soften. (Adjust the water amount if needed; too much water can make the dish watery).

In a separate small bowl, combine all the seasoning ingredients: soy sauce, sugar, gochugaru, and salt. Mix them well with a clean spoon. Preparing the sauce mixture in advance makes it convenient to add during cooking without interrupting your flow.

When the glass noodles are mostly cooked and there is a bit of liquid left in the pan, pour the pre-mixed seasoning sauce evenly over the noodles. Gently toss to ensure the sauce coats the glass noodles thoroughly.

Once the sauce has coated the glass noodles well, add the washed and prepared chives. Chives cook very quickly and can become mushy if overcooked, so stir-fry them over high heat for no more than 1 minute. If you prefer a crispier texture, cook them just slightly before turning off the heat. Even after the noodles are fully cooked, the residual heat in the pan will continue to cook the chives. Letting it sit for a moment after turning off the heat will preserve the fresh taste and texture of the chives.
