First, gently rinse the tteokguk tteok under cold water. This helps remove any dust or debris and prevents the rice cakes from sticking together. Prepare the mozzarella cheese. Adjust the amount of cheese based on the quantity of tteok you are using.

Place the rinsed tteokguk tteok in a frying pan, then generously cover it with mozzarella cheese. It’s important to cook over medium heat. If cooked over high heat, the tteok might burn, or the cheese may not melt evenly.

While the tteok is partially covered by cheese, use a spatula or chopsticks to spread the tteok out. This helps the cheese melt smoothly and spread evenly over the tteok. Once the cheese starts to melt and stick, reduce the heat to low.

Now, drizzle a little grapeseed oil (or cooking oil) around the edges of the pan. The oil will seep between the tteok and cheese, making the tteok chewier and coating the cheese to prevent it from burning. Gently stir the tteok and cheese with your spatula as they cook.
