This is an incredibly simple and fast, yet delicious, pork belly stir-fry that anyone can make! It’s perfect as a quick snack with drinks or as a side dish for kids. The combination of tender pork belly, savory oyster sauce, and tender enoki mushrooms is simply irresistible. Enjoy a satisfying meal without much fuss!
Main Ingredients- 400g thinly sliced pork belly (daepae samgyeopsal)
- 1 packet enoki mushrooms
- 1/2 large green onion (scallion)
Seasoning- 1 Tbsp oyster sauce
- 2 Tbsp soy sauce (for seasoning, ‘mat-ganjang’)
- 1 tsp minced garlic
- 2-3 Tbsp oligosaccharide (adjust to taste)
- 1 Tbsp cooking wine with ginger (or mirin/sake)
- A pinch of toasted sesame seeds
- A pinch of black pepper
- 1 Tbsp oyster sauce
- 2 Tbsp soy sauce (for seasoning, ‘mat-ganjang’)
- 1 tsp minced garlic
- 2-3 Tbsp oligosaccharide (adjust to taste)
- 1 Tbsp cooking wine with ginger (or mirin/sake)
- A pinch of toasted sesame seeds
- A pinch of black pepper
Cooking Instructions
Step 1
Prepare the thinly sliced pork belly. Using it frozen makes cooking easier and prevents it from clumping together.
Step 2
Trim the base of the enoki mushrooms and then gently pull them apart into smaller sections. This helps the sauce coat them evenly.
Step 3
Finely chop the green onion. If you like a bit of heat, you can finely chop 1-2 Korean chili peppers (cheongyang peppers) to add at this stage for extra flavor.
Step 4
Heat a pan over high heat. Add the frozen pork belly, minced garlic, oligosaccharide, oyster sauce, cooking wine (or mirin), and a pinch of black pepper. Stir-fry vigorously until the pork is cooked through and any excess moisture has evaporated. Adjust the amount of oligosaccharide based on your preference for sweetness.
Step 5
Once the pork belly is nicely browned and crisp, add the prepared enoki mushrooms and chopped green onion. Pour in the soy sauce (mat-ganjang) and stir-fry everything together.
Step 6
Stir-fry just until the enoki mushrooms are tender and slightly wilted. Be careful not to overcook them, as they can become mushy.
Step 7
Taste the stir-fry and adjust the seasoning if needed by adding more soy sauce or oyster sauce. Finally, sprinkle with toasted sesame seeds for a nutty aroma. This dish is fantastic for those who prefer mild flavors, or as a quick and tasty side dish for children!
