I’m making the Injeolmi Toast I used to enjoy so much, reminiscent of the popular cafe ‘Sulbing’! It’s been about 2-3 years since I last visited. Seeing Injeolmi (Korean sweet rice cake) at the supermarket brought back memories of its wonderfully chewy texture, inspiring me to recreate this delightful treat. It’s a simple yet delicious dessert perfect for a quick indulgence.
Ingredients- 2 slices of bread
- 2-3 pieces of Injeolmi (Korean sweet rice cake), adjusted to your preference
- Sweetened condensed milk, to taste
- Roasted peanuts, crushed (optional)
Cooking Instructions
Step 1
Start by preparing two slices of bread, the foundation of your Injeolmi Toast. Using bread that toasts up nicely—crispy on the outside and soft on the inside—will enhance the texture.

Generously drizzle sweetened condensed milk over one side of a bread slice. The sweetness from the condensed milk will beautifully complement the other flavors and elevate the overall taste. Feel free to adjust the amount according to your preference.

Prepare the Injeolmi by gently pressing it with your hands to flatten it slightly. This helps it sit securely between the bread slices without oozing out. Place about 6 flattened pieces of Injeolmi onto the condensed milk-coated bread slice. Then, top with the second slice of bread to create a sandwich.

Preheat your sandwich maker and place the assembled sandwich inside. Grill until golden brown and grill marks appear. If you don’t have a sandwich maker, you can toast it in a lightly buttered or oiled frying pan over low heat, flipping to achieve a golden-brown crispiness on both sides.

Carefully remove the toasted sandwich from the maker and slice it in half. You might notice some of the melted Injeolmi and condensed milk starting to ooze out – this is perfectly normal! Let it rest for a moment, standing upright if possible, to allow the filling to settle.

Sprinkle the soybean powder that may have come with your Injeolmi, or some extra powder you have, generously over the top of the toast. The nutty aroma of the soybean powder adds a wonderful depth of flavor. But we’re not quite done yet – let’s add an extra touch of deliciousness!

Finely chop or crush the roasted peanuts. Gently press the chopped peanuts onto the exposed filling along the cut side of the halved toast. The chewy Injeolmi and nutty soybean powder are beautifully complemented by the crunchy texture and rich flavor of the peanuts, creating a perfect flavor balance. Then, cut the toast into quarters for easier eating.
Step 8
Finally, give it another light dusting of soybean powder to finish. Your Injeolmi Toast, boasting chewiness, sweetness, and nuttiness, is now ready! It makes for a satisfying snack or even a light meal. Enjoy it immediately while it’s warm for the best experience!
