Cooking Instructions
Step 1
[Prepare the Five-Color Namul] Begin by soaking the five types of dried vegetables (dried pumpkin tendrils, sweet potato stems, bracken, Aster scaber, shiitake mushrooms) in cold water overnight until fully rehydrated. Rinse them thoroughly. In a pot, add enough rice water to cover the vegetables and boil until they are tender. Once boiled, rinse the namul under cold water and squeeze out any excess moisture.
Step 2
[Season and Stir-fry the Namul] In a bowl, gently mix the prepared namul with fish sauce (or soy sauce) and minced garlic. Heat a frying pan over medium heat with a little cooking oil. Sauté the minced garlic first until fragrant. Add the seasoned namul to the pan and stir-fry, adding the anchovy-kelp broth a little at a time as needed. Once the namul is cooked through, finish by stirring in sesame oil and toasted sesame seeds for a nutty aroma.
Step 3
[Marinate the Beef] For the stir-fried beef, combine soy sauce, cooking wine, rice syrup, minced garlic, sesame oil, and a pinch of black pepper in a bowl. Mix well with the beef and let it marinate for at least 30 minutes. This marination step will ensure the beef is tender and flavorful.
Step 4
[Prepare the Beef Stir-fry Vegetables] Thinly slice the onion and carrot into strips. Cut the green onion into diagonal pieces. Slicing the vegetables to a similar size as the beef will help them cook evenly.
Step 5
[Stir-fry the Beef] Heat a frying pan over medium-high heat and add the marinated beef. Stir-fry until the beef is about halfway cooked. Then, add the sliced onion and carrot and continue to stir-fry together. Once the beef and vegetables are fully cooked, add the green onions and stir-fry briefly. Finish by adding sesame oil and toasted sesame seeds for extra flavor, then remove from heat.
Step 6
Arrange the completed Five-Color Namul and Stir-fried Beef attractively on a serving plate. Sprinkle with extra toasted sesame seeds for a beautiful presentation. Enjoy this delicious and healthy side dish with a bowl of warm rice!
