Ingredients

  • 200g finely chopped Jokbal (meat scraped from the bones)
  • 1.5 bowls of warm cooked rice
  • 1/2 large green onion
  • 2 cloves garlic
  • 1 Korean chili pepper (Cheongyang)
  • 1 red chili pepper
  • 1 Tbsp sesame seeds
  • 0.7 Tbsp soy sauce
  • 1.5 Tbsp cooking oil
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, prepare the ingredients for the fried rice. Finely chop the Jokbal into bite-sized pieces. Thinly slice the green onion (1/2 large stalk). Seed the Korean chili pepper and red chili pepper, then thinly slice them diagonally. Thinly slice the 2 cloves of garlic.

Heat a pan over medium-low heat and add 1.5 Tbsp of cooking oil. Add the sliced green onion and garlic. Stir-fry until fragrant, until the green onion and garlic become lightly golden brown. This process will deepen the flavor of the fried rice significantly.

Once the garlic is fragrant and starting to brown, add the finely chopped Jokbal to the pan. Stir-fry together until the Jokbal’s surface is slightly browned and its chewy texture is enhanced. It’s important to fry the Jokbal enough so its delicious juices are released into the pan.

When the Jokbal is sufficiently stir-fried, add 0.7 Tbsp of soy sauce along the edge of the pan. As the soy sauce heats and caramelizes slightly, it will add depth of flavor and a nice color to the Jokbal. Stir well to coat the Jokbal evenly with the soy sauce.

Now, add 1.5 bowls of warm cooked rice to the pan with the Jokbal. Use a spatula to gently break up any clumps of rice and stir-fry until the Jokbal and other ingredients are well combined with each grain of rice. Continue stir-frying until the rice becomes fluffy and absorbs the flavors of the Jokbal.

Finally, add the sliced Korean chili pepper and red chili pepper and stir-fry briefly. Adding the chili peppers introduces a spicy kick and vibrant color, making the fried rice look even more appetizing. Stir-fry just enough to maintain the peppers’ crisp texture and spicy aroma as they meld with the rice.

Just before turning off the heat, add 1 Tbsp of sesame seeds and 1 Tbsp of sesame oil. Stir everything together thoroughly. The nutty aroma of the sesame oil and the crunch of the sesame seeds will elevate the flavor of the Jokbal fried rice even further. Mix gently until all ingredients are well combined. Your delicious Jokbal fried rice is now ready!
