- 1 Onion
- A handful of Spring Onions or Green Onions
- Plenty of Mozzarella Cheese

Cooking Instructions
Step 1
First, rinse the red scallops thoroughly under running water to remove any dirt or debris. Then, place them in a bowl of cold water with a tablespoon of coarse salt and let them purge for about 30 minutes to 1 hour. This process helps remove any sand or impurities inside the scallops, ensuring a cleaner taste.

After purging, rinse the scallops again. You can either split them in half or leave them whole if the shells are already slightly open. Preparing them with one shell attached makes it easier to top with cheese later.
