Main Ingredients

  • 1 portion Udon noodles
  • 8 Mussels
  • 1/2 Squid
  • 3 Prawns
  • 1 Bok Choy
  • 1 Shiitake mushroom
  • 1/2 Green onion
  • 150ml Water

Seasoning Ingredients

  • 3g Ginger (minced)
  • 0.5 Tbsp Minced garlic
  • 2 Tbsp Chili oil
  • 1.5 Tbsp Chili flakes (Gochugaru)
  • 2 Tbsp Cooking wine (Mirin)
  • 0.5 Tbsp Oyster sauce
  • 1.5 Tbsp Fish sauce
  • 0.5 Tbsp Soy sauce (for soup)
  • 1 Tbsp Sesame oil
  • A pinch of Black pepper

Cooking Instructions

Prepare all the ingredients for a delicious stir-fried jjamppong. Washing and chopping them beforehand will make the cooking process much smoother.

Start by preparing the seafood. For the mussels, remove the beards and wash them thoroughly under running water. Peel and devein the prawns. Score the squid skin with diagonal cuts and then slice it into bite-sized pieces. Slice the shiitake mushroom and bok choy into manageable pieces. Mince the ginger finely. Slice the green onion diagonally.

Bring a pot of water to a boil and cook the udon noodles for about 1 minute. Be careful not to overcook them, as they can become mushy. Immediately drain the noodles and rinse them under cold water to firm them up. Thoroughly drain them in a colander to prevent the dish from becoming watery when stir-fried.

Heat chili oil in a wok or a deep pan over medium-low heat. Add the sliced green onions, minced garlic, and minced ginger, and stir-fry until fragrant. Once the aroma releases, increase the heat to high and quickly add the squid, mussels, and prawns. Stir-fry until the seafood is partially cooked. Then, add the chili flakes and stir-fry briefly, being careful not to burn them.

Pour 150ml of water into the pan and bring it to a boil. Let it simmer for about 3 minutes. This process allows the seafood flavors to infuse into the broth, enhancing the overall taste of the stir-fried jjamppong.

Reduce the heat to medium. Add the oyster sauce, fish sauce, cooking wine, and soy sauce according to the measurements. Finally, add the prepared bok choy and stir-fry for another 1-2 minutes until it’s slightly tender but still crisp. It’s important to maintain the bok choy’s crunchy texture.

Add the well-drained udon noodles to the pan. Gently toss and stir-fry for about 30 seconds, ensuring the noodles are evenly coated with the sauce. This step allows the noodles to absorb the delicious flavors.

Once the sauce has reduced slightly to your desired consistency, lower the heat to low. Finish by adding 1 tablespoon of sesame oil and a pinch of black pepper for extra aroma and flavor.
