My eldest son loves chicken, so I fried up a big batch for him, and he devoured almost all of it, leaving just a few pieces! Since the leftover amount was a bit too small to eat on its own, I decided to make a delicious fried rice with the meat. I initially thought about making chicken mayo rice bowls, but realized they’d be tricky to pack for lunch. So, fried rice was the way to go! He told me that even as fried rice, if you mix it with mayonnaise to your liking, it tastes just like chicken mayo rice bowls, and he loved it. Main Ingredients- Chicken (leftover fried chicken) 2 cups (shredded or chopped into bite-sized pieces)
- Warm cooked rice 4 bowls
- Eggs 4
- Perilla leaves (깻잎) 2 sheets (thinly julienned)
Seasoning- Chili seed oil (고추씨기름) 5 Tbsp
- Fish sauce 2 Tbsp
- Anchovy sauce (참치액) to taste
- Toasted sesame seeds a pinch (for garnish)

Cooking Instructions
Step 1
Heat a large pan over medium-low heat and add a generous amount of 5 Tbsp chili seed oil. The spicy and nutty aroma of the chili seed oil will enhance the flavor of the fried rice.
Step 2
Once the oil is hot, add minced garlic (or sliced garlic) and stir-fry until fragrant, being careful not to burn it. Move to the next step when you can smell the garlic aroma rising.
Step 3
Add the prepared chicken pieces to the pan and stir-fry them with the garlic. It’s even tastier if you sauté the chicken until it’s slightly golden brown.
Step 4
Push the sautéed chicken to one side of the pan. Pour in the 4 beaten eggs into the empty space and scramble them. Once the eggs are softly cooked, mix them in with the chicken and garlic.
Step 5
Add the 4 bowls of warm cooked rice to the pan. Use a spatula to break up any clumps of rice and mix well with the eggs and chicken. Stir-fry evenly so the rice doesn’t clump together.
Step 6
Once the rice is somewhat fried, add 5 Tbsp chili seed oil, 2 Tbsp fish sauce, and a bit of anchovy sauce to taste. Stir-fry thoroughly until all ingredients and seasonings are well combined.
Step 7
Finally, add the julienned perilla leaves and mix briefly before turning off the heat. Serve attractively in a bowl and sprinkle with toasted sesame seeds for a delicious chicken fried rice! If you prefer, you can also add mayonnaise to taste for a different flavor.
