Hello! Today, I’m sharing a vegan potato cracker recipe that’s incredibly easy to make with just an oven. The mashed potatoes make these crackers wonderfully moist and savory with every bite. They boast an amazing flavor even with simple ingredients, making them perfect for a snack when you’re feeling peckish or to enjoy with tea. Ingredients- 150g cake flour (for a tender texture)
- 1g salt (enhances flavor)
- 15g sugar (for a subtle sweetness)
- 40g canola oil (for crispiness and richness)
- 100g mashed cooked potato (provides moisture and savory taste)
- Pinch of sugar for topping (optional, for added sweetness)
Cooking Instructions
Step 1
Place the washed potatoes in a bowl, add 1-2 tablespoons of water, cover with plastic wrap, and microwave for about 9 minutes until tender. Adjust cooking time based on potato size.
Step 2
Carefully remove the hot potatoes from the microwave. Once they’ve cooled slightly, mash them thoroughly with a fork or masher until smooth. If the mixture is too wet, let it cool a bit more before proceeding.
Step 3
In a large bowl, sift together 150g of cake flour, 1g of salt, and 15g of sugar. Whisk lightly to combine evenly, ensuring there are no lumps.
Step 4
Add 40g of canola oil to the bowl from step 2. Using your fingertips, rub the oil into the flour mixture until it resembles coarse breadcrumbs. Ensure it’s well combined.

Add the 100g of mashed potato to the bowl from step 3. Gently mix with a spatula or your hands until the ingredients just come together to form a cohesive dough. Avoid overmixing, as this can make the crackers tough.

Transfer the dough to a work surface lined with parchment paper. Place another sheet of parchment paper on top of the dough, and use a rolling pin to roll it out thinly to about 2-3mm thickness. Aim for an even thickness for consistent baking.

Using a knife or pizza cutter, cut the thinly rolled dough into your desired shapes and sizes. Arrange the cut dough pieces on a baking sheet, leaving some space between them.

Prick the surface of each cracker with a fork. This prevents them from puffing up too much and helps them bake up extra crispy. If desired, sprinkle a little sugar on top for added sweetness.
Step 9
