  • 1/4 carrot
  • 1/3 cucumber (or pickled cucumber, brined cucumber)

  • 15 Tbsp mayonnaise (adjust to taste)
  • 1 Tbsp sugar (adjust sweetness)
  • 1 tsp salt (adjust seasoning)
  • 1/3 tsp black pepper (for aroma)

First, prepare the star ingredient: the potatoes. Use a peeler to carefully remove the skin from the potatoes. Rinse the peeled potatoes under running water.

Place the prepared potatoes in a pot and add enough water to cover them about halfway. Bring to a boil over high heat. Tip: If you’re boiling potatoes to eat as is, rather than for salad, add 1 Tbsp of sugar and 1 tsp of salt to the water. This enhances the natural sweetness and savory flavor of the potatoes. Since I’m making salad, I boiled them without seasoning for a plain taste.

Once the water starts boiling vigorously, cover the pot with a lid and reduce the heat to medium. This helps the potatoes cook evenly inside while retaining moisture.

Simmer over medium heat for about 20-30 minutes. By the time the potatoes are almost cooked, most of the water in the pot will have evaporated. The cooking time may vary depending on the size of your potatoes; you can test for doneness by inserting a fork – it should go in smoothly. I used slightly larger potatoes, so I boiled them for about 35 minutes. After boiling, while the lid is still on, gently shake the pot. This action causes the potatoes to lightly bump against each other, creating a fluffy texture (‘flour’) that is perfect for salad. Be careful to shake gently so the potatoes don’t break apart.

While the potatoes are boiling, prepare the vegetables for the salad. Finely dice 1/4 onion, 1/4 carrot, and 1/3 cucumber. These vegetables add texture and flavor to the potato salad.

You can use fresh cucumber, but using pre-made brined or pickled cucumbers, like I did, can add a unique flavor. If you have pickle slices, finely chopping them also works wonderfully for a refreshing and crunchy element. Choose based on your preferred taste and texture.

It’s crucial to mash the potatoes while they are still warm. They become much harder to mash once they cool down. Use a potato masher if you have one, or a fork to mash them until smooth. Even if there are a few small lumps remaining, that’s perfectly fine and adds a nice texture.

Mash the two hard-boiled eggs with a fork as well. The creaminess of the eggs will blend beautifully with the potatoes, enhancing the overall flavor of the salad.

Now, add the finely chopped vegetables to the mashed potatoes and eggs. The colorful addition of vegetables makes the salad look even more appealing.

It’s time to mix in the dressing ingredients. Add 15 Tbsp mayonnaise, 1 Tbsp sugar, 1 tsp salt, and 1/3 tsp black pepper. Feel free to adjust the amount of sugar and salt to your personal preference. I found this ratio perfect, but you can add more if you prefer it sweeter or saltier. If the potato salad seems too thick, add a little more mayonnaise to achieve a creamier consistency.
