Coffee Syrup Ingredients

  • 3g ground coffee beans
  • 30g milk
  • 30g condensed milk

Let’s start by making the coffee syrup. In a small saucepan, gently heat 30g of milk and 30g of condensed milk over low heat until just warm. Remove from heat immediately and stir in 3g of ground coffee beans. Let it steep for about 10 minutes to infuse a deep coffee flavor.

Now, for the cake batter! In a large bowl, combine 100g of softened unsalted butter and 30g of granulated sugar. Using an electric mixer on low speed, cream them together until light and fluffy. It’s important to mix well until the butter is pale and creamy.

Once the butter and sugar mixture is pale and has a creamy consistency, gradually add 30g of room-temperature egg, in 2-3 additions. Beat well after each addition to ensure it’s fully incorporated. Adding the egg slowly prevents the batter from curdling.

Sift together 120g of cake flour, 2g of baking powder, and a pinch of salt directly into the bowl. Sifting aerates the dry ingredients and ensures a smoother batter. Gently fold the dry ingredients into the wet ingredients using a spatula until just combined. Be careful not to overmix, as this can make the cake tough.

Prepare the coffee liquid by mixing the steeped coffee syrup (milk, condensed milk, and coffee infusion), 1g of instant coffee powder, and 15g of milk. Pour this liquid into the batter and fold gently with the spatula until no dry streaks remain. If the batter is too thick, you can add a little more milk (up to 15g).

Pour the batter into a square baking pan (approximately 7×7 inches or 18×18 cm) lined with parchment paper. Smooth the top evenly. Bake in a preheated oven at 170°C (340°F) for about 20 minutes, or until a skewer inserted into the center comes out clean. Let it cool slightly in the pan before removing.

While the cake is baking, let’s prepare the coffee glaze for the topping. In a small bowl, mix 1g of instant coffee powder with 15g of milk until the coffee is completely dissolved. This will create a smooth glaze perfect for brushing.

Once the cake has baked and cooled slightly, use a pastry brush to generously apply the prepared coffee glaze all over the top surface. This adds an extra layer of moisture and coffee flavor.

Place the cake back into the oven or an air fryer preheated to 200°C (400°F) for about 5 minutes, or until the marshmallows are golden brown and puffed up.
