While seasoned seaweed laver (gim-jaban) is common, seaweed flakes (miyeok-jaban) might be a new discovery for many! This recipe is incredibly simple, making it perfect to try with the dried seaweed you already have at home. The flavor profile is similar to sweet and savory gim-jaban, but miyeok-jaban boasts a saltier, more umami-rich taste. Main Ingredients- 30g dried seaweed (before rehydrating)
- 3 Tbsp cooking oil
- 2 Tbsp white sugar
- 1 tsp honey (or corn syrup)
- 20g sliced almonds (or other nuts)
- 2 Tbsp water
Cooking Instructions
Step 1
First, prepare all the ingredients needed for the recipe by measuring them out. Rinse the dried seaweed in cold water, squeeze out any excess moisture, and cut it into bite-sized pieces (about 2-3 cm).
Step 2
Heat 3 tablespoons of cooking oil in a pan over medium-low heat. Add the prepared seaweed and stir-fry for about 5-7 minutes until it becomes slightly crispy, almost fried. Transfer the fried seaweed to a plate lined with paper towels to absorb any excess oil.
Step 3
Wipe the pan clean, or use a separate one. Heat the pan over low heat, then add 2 tablespoons of water. Stir in 2 tablespoons of white sugar and 1 teaspoon of honey. Stir continuously with a spatula until the sugar and honey are completely dissolved and the mixture begins to bubble like syrup. Keep the heat low or briefly turn it off to prevent burning.
Step 4
Once the sugar syrup is well dissolved and bubbling, return the crispy seaweed to the pan. Keep the heat on low and quickly toss the seaweed to coat it evenly with the syrup. Stir-fry for about 1-2 minutes, ensuring the seaweed is glossy and the seasoning adheres well.
Step 5
Finally, add 20g of sliced almonds and gently mix them with the seaweed. The nuts add extra crispness and a nutty aroma. Feel free to use sesame seeds or other favorite nuts as well.
Step 6
Transfer the finished seaweed flakes to a wide plate or tray and let them cool slightly. They might seem a bit soft when hot, but they will become wonderfully crispy and flavorful as they cool. Simple seaweed has transformed into an incredibly addictive sweet, savory, and crunchy ‘magical taste’ with the help of honey, sugar, and almonds!
