Ingredients

  • 1 handful dried anchovies (for broth)
  • 2-3 pieces dried kelp (dashima)
  • 400ml water
  • 300g available soybean pulp (kongbiji)
  • 1/2 Tbsp soy sauce for soup (guk-ganjang)
  • 300g napa cabbage
  • 1 Tbsp sesame seeds (whole or ground)

Cooking Instructions

Step 1

Making a proper anchovy broth usually requires time and care, but today we’ll make a quick and easy one! Bring 400ml of water to a rolling boil. Add the dried kelp and anchovies and simmer for about 5 minutes. After 5 minutes, remove the kelp. Continue simmering for another 10 minutes, then remove the anchovies to create a clean broth.

While the anchovy-kelp broth is boiling, add the chopped napa cabbage. If there isn’t enough water for the cabbage to be submerged, you can add an extra 100-200ml.

Once the napa cabbage is about halfway cooked, add 1/2 Tbsp of soy sauce for soup to season. You can also use homemade soy sauce or salted fermented shrimp (saeujeot) for flavor. Taste and adjust seasoning if needed.

Now, add the 300g of available soybean pulp (kongbiji) and stir well to prevent lumps. Continue to simmer for another 5 minutes.

It’s important to simmer the kongbiji sufficiently after adding it, as it can develop a raw bean flavor if not cooked enough. Turn off the heat once the napa cabbage is tender and the kongbiji is well incorporated.

Ladle the finished Napa Cabbage Kongbiji Stew into bowls. Just before serving, sprinkle generously with whole or ground sesame seeds for a nutty aroma. It’s incredibly easy to make, packed with nutrients, and a delicious vegan stew!
