Easy Homemade Cobb Salad Recipe
A Cobb Salad doesn’t have a strict ingredient list! It originated from a chef named ‘Cobb’ in a famous Hollywood restaurant in the 1930s, who created it using leftover ingredients from the kitchen. This means you can easily make your own unique salad with ingredients you have on hand. I made this one using leftover ingredients from making pizza – it’s fresh, delicious, and simple. Let’s get started!
Salad Ingredients- 2 chicken breasts
- 1/2 can sweet corn, drained
- A handful of black olives
- 1 avocado
- 1/2 cucumber
- 1/2 red onion
- A handful of mixed greens (like sprouts)
- 3 small bell peppers (various colors)
- About 10 cherry tomatoes
Homemade Ranch Dressing- 100ml milk
- 2 Tbsp fresh lemon juice
- 100g mayonnaise
- 100g sour cream
- 1 tsp minced garlic
- 1 Tbsp white wine (optional)
- A pinch of dried parsley
- 1/4 tsp salt

Cooking Instructions
Step 1
Prepare all your ingredients for a fresh and delicious Cobb Salad.

If your chicken breasts are frozen, thaw them in the microwave. Slice them in half lengthwise to about 1.5 cm thickness. Season generously with black pepper, basil, and salt. Feel free to adjust herbs to your preference.

Heat a pan with a generous amount of olive oil. Sear the seasoned chicken breasts until golden brown on both sides. The key is to get a nice sear on the outside while keeping the inside juicy.

Once the chicken breasts are nicely cooked, let them cool slightly. Then, dice them into approximately 1.5 cm cubes for easy eating.

Cut the prepared vegetables into neat, uniform pieces, characteristic of a Cobb Salad. Halve the avocado, remove the pit, and slice it about 1.5 cm thick. Dice the cucumber and bell peppers into similar-sized pieces. Thinly slice the red onion.

In a bowl, combine 100ml of milk with 2 tablespoons of lemon juice. Let it sit for a few minutes; you’ll notice the milk start to curdle slightly, creating a homemade buttermilk. Whisk gently.

To the buttermilk mixture, add 100g of mayonnaise, 100g of sour cream, 1 tsp of minced garlic, 1 Tbsp of white wine (if you want to add extra flavor), 1/4 tsp of salt, and dried parsley. Stir gently until all ingredients are well combined.

Once all ingredients are smoothly incorporated, your homemade ranch dressing is ready! Taste and adjust seasoning with more salt or lemon juice if desired.
