Main Ingredients- 6 strips bacon
- 1/4 yellow bell pepper
- 1/4 red bell pepper
- 1 bunch enoki mushrooms (trim the root)

First, let’s prepare the vegetables. Cut the yellow and red bell peppers into quarters and then julienne them into thick strips. Trim the root end off the enoki mushrooms. Having your ingredients prepped beforehand makes the cooking process much smoother.

Now, it’s time to roll! Lay one strip of bacon flat. Place a bundle of enoki mushrooms and a portion of the julienned bell peppers on top. Be careful not to overload it, as it can be difficult to roll if you use too much filling. Then, starting from one end, carefully roll the bacon around the enoki mushrooms and bell peppers, ensuring they stay tucked inside.

Repeat the same process with the remaining 5 strips of bacon, enoki mushrooms, and bell peppers to create beautiful rolls. I made a small batch today for a lunchbox. Making them bite-sized also makes them great as a snack for kids!
