Main Ingredients- 1/4 head of well-fermented kimchi, chopped
- 1 can (150g) tuna, drained
- 1/2 onion, thinly sliced
- 1/2 stalk green onion, diagonally sliced
- 1L water (approx. 4 cups)
Seasoning- 1 Tbsp sesame oil
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 2 Tbsp gochugaru (Korean chili flakes)
- 0.5 Tbsp soy sauce for soup (or fish sauce)
- 1 Tbsp fish sauce (for enhanced umami!)
- 1 Tbsp sesame oil
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 2 Tbsp gochugaru (Korean chili flakes)
- 0.5 Tbsp soy sauce for soup (or fish sauce)
- 1 Tbsp fish sauce (for enhanced umami!)
Cooking Instructions
Step 1
In a deep pot, add the chopped kimchi. Stir in 1 Tbsp sesame oil and 1 Tbsp sugar. Sauté over medium heat for about 5 minutes until the kimchi becomes translucent and tender. This process reduces the sourness and enhances the sweetness and savory flavors.
Step 2
Once the kimchi is well stir-fried, pour in 1L (about 4 cups) of water. Add 1 Tbsp minced garlic, 2 Tbsp gochugaru, 0.5 Tbsp soy sauce for soup, and 1 Tbsp fish sauce. Stir to combine all the seasonings, then bring to a rolling boil over high heat.
Step 3
When the stew starts to boil, open the tuna can, drain the oil, and add only the tuna chunks to the pot. Let it simmer to allow the tuna flavor to infuse into the broth.
Step 4
Add the sliced onion and diagonally sliced green onion. Reduce the heat to medium-low and simmer for another 5-10 minutes. The stew is ready when the vegetables are tender and the broth has slightly reduced. Adjust seasoning with more soy sauce or fish sauce if needed. Enjoy!
