Main Ingredients

  • Pork Belly 250g (sliced into approx. 2cm thick pieces)
  • Well-fermented Sour Kimchi 1/2 head (chopped into bite-sized pieces)
  • Onion 1/3 (thickly sliced or roughly chopped)
  • Green Onion a little (sliced diagonally)

Seasoning

  • Soy Sauce for Soup 1 Tbsp
  • Sugar 1 Tbsp
  • Minced Garlic 1 Tbsp
  • Fish Sauce 1 Tbsp (for umami boost!)
  • Chicken Stock 1 Tbsp (enhances flavor, optional)
  • Black Pepper a pinch

Cooking Instructions

Step 1

In a deep pot, arrange the prepared pork belly and sour kimchi. Sear them over high heat until lightly browned. This renders some of the fat from the pork, adding rich flavor. Once the pork is somewhat seared, pour in 500ml of water and bring to a rolling boil over high heat.

Once boiling, add all the seasoning ingredients: soy sauce for soup, sugar, minced garlic, fish sauce, chicken stock, and black pepper. Stir well to combine. Reduce the heat to medium, cover the pot, and let it simmer for about 25 minutes until the sauce thickens. Stewing for this long allows the flavors to deeply penetrate the kimchi and pork, creating a wonderful depth of taste. If the liquid reduces too much during simmering, add a little more water and continue to reduce. If you prefer smaller pieces, you can cut the kimchi and pork belly into more manageable sizes at this stage.

Finally, add the sliced onion and continue to simmer for about 5 more minutes until the kimchi is tender and the broth is slightly reduced to a desirable consistency. Stir in the sliced green onions for a fresh aroma. Taste the stew and adjust with salt if needed. This hearty Pork Belly Kimchi Stew, served piping hot with a bowl of freshly steamed rice, is a meal that needs no other accompaniments!
