Sometimes, when a healthy meal is on the mind, Vietnamese spring rolls are the perfect guilt-free indulgence! Although, it’s easy to eat so much that it defies the ‘diet’ label! Storing pre-cut ingredients in containers makes it incredibly convenient to whip up a fresh roll whenever the craving strikes. Enjoy a vibrant mix of fresh vegetables, tender chicken breast, and savory imitation crab sticks! Pair them with your favorite dipping sauce for a delightful and satisfying meal.

Fresh Vegetables

  • 1/3 carrot, julienned
  • 2/3 cucumber, seeded and julienned
  • 1/2 red bell pepper, seeded and julienned
  • 1/2 yellow bell pepper, seeded and julienned

  • 5 sticks imitation crab (kani kama)

Let’s start with preparing the fresh vegetables. Wash and peel the 1/3 carrot, then julienne it thinly and evenly. Slicing them with care, like painting with a brush, will make them look even more appetizing.

Prepare the crunchy cucumber next. Cut the 2/3 cucumber in half, scoop out the seeds with a spoon, and then julienne it into pieces similar in thickness and length to the carrots. Removing the seeds helps reduce excess moisture, making for a cleaner bite.

Add color and nutrients with vibrant bell peppers! Prepare 1/2 red bell pepper and 1/2 yellow bell pepper, remove the seeds, and julienne them to a size comparable to the carrots and cucumbers. The dazzling array of colors will make your dining table truly festive.

Chicken breast adds a nice lean protein element. Place the thawed frozen chicken breast in a pot, cover with just enough water, and add a pinch of salt and about 5 black peppercorns. Cover the pot and simmer over medium heat until the chicken breast is cooked through. The whole peppercorns help to remove any gamey smell effectively.

Once the chicken breast is cooked, remove it from the pot and let it cool slightly. It’s best to shred it while it’s still a little warm; this way, the fibers remain distinct, resulting in a more tender and flavorful texture.

Now, arrange all the prepared ingredients attractively in nice containers or bowls and store them in the refrigerator. Having these ingredients prepped makes it incredibly easy to just take them out whenever you want to enjoy fresh spring rolls. Simply wrap them in rice paper – no complex cooking needed, perfect for busy days too. ^^

Prepare a delicious dipping sauce to enhance the flavor of your spring rolls. I personally love the rich and nutty flavor of peanut sauce, so I usually opt for store-bought versions. They are readily available at most supermarkets. You can also try other sauces like chili sauce, sweet chili sauce, or mustard sauce for a different taste experience!

Have a shallow dish of warm water ready. Briefly dip a rice paper wrapper in the warm water until it becomes pliable, then place your desired vegetables, chicken breast, and imitation crab inside.
