  • 500g preserved garlic scapes

Seasoning Ingredients

  • 1 Tbsp gochujang (generous)
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 3 Tbsp braising soy sauce (jorim ganjang)
  • 1 tsp minced garlic
  • 2 Tbsp oligosaccharide
  • 1 Tbsp sugar
  • 2 Tbsp toasted sesame seeds
  • 1 tsp sesame oil

Cooking Instructions

Here are the preserved garlic scapes taken from the refrigerator. (If you have garlic scapes preserved in soy sauce brine as Jangajji, they are already a great side dish on their own, but making them into a seasoned dish like today is also a unique treat!)

First, cut the preserved garlic scapes into bite-sized pieces (about 4-5 cm long). Then, soak them in cold water for about 2-3 hours to remove the saltiness. Changing the water once halfway through will help even more.

Drain the water from the garlic scapes or gently squeeze out the excess water. *Important Tip: Taste one piece of garlic scape to check the saltiness. If it still tastes too salty, soak it in cold water for another 1-2 hours to adjust the salt level.

Now, let’s make the delicious seasoning! In a bowl, combine gochujang, gochugaru, braising soy sauce, minced garlic, oligosaccharide, sugar, toasted sesame seeds, and sesame oil. Mix well to create the seasoning paste. *Sweetness Adjustment Tip: Adjust the amount of oligosaccharide and sugar according to your preference. If you prefer it sweeter, feel free to add more sugar or oligosaccharide.

Add the prepared seasoning paste and toasted sesame seeds generously to the drained garlic scapes.

Gently mix everything together so the seasoning coats the garlic scapes evenly. (Since this is a side dish meant to be stored in the refrigerator for a long time, I intentionally omitted minced green onions, which can spoil easily. This ensures a clean and refreshing taste.)
