Spicy and Refreshing Mackerel and Radish Kimchi Stew
A recipe for mackerel, radish, and kimchi stew, inspired by a YouTube video, for an even more delicious experience. This stew is a true rice-stealer with its spicy broth, tender mackerel, and the refreshing taste of radish!
Main Ingredients- 1 can of Mackerel (including the liquid)
- 1/2 Korean radish (about 300g)
- 1 handful of Kimchi (well-fermented)
Seasoning Ingredients- 2 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Mirin (rice wine)
- 1 Tbsp Sugar
- 1 Tbsp Soy sauce (or fish sauce)
- 1 Tbsp Sesame oil
- 1 Tbsp Doenjang (fermented soybean paste)
- 1 Tbsp Minced garlic
- 3 cups Water (excluding mackerel can liquid)
- 2 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Mirin (rice wine)
- 1 Tbsp Sugar
- 1 Tbsp Soy sauce (or fish sauce)
- 1 Tbsp Sesame oil
- 1 Tbsp Doenjang (fermented soybean paste)
- 1 Tbsp Minced garlic
- 3 cups Water (excluding mackerel can liquid)
Cooking Instructions
Step 1
First, wash the half Korean radish thoroughly, peel it, and slice it into 0.5cm thick, flat pieces. Arrange the sliced radish at the bottom of a pot. Placing radish at the bottom makes the broth more refreshing and helps neutralize any fishy smell from the mackerel.
Step 2
Add the entire can of mackerel, including its liquid, into the pot. The mackerel adds a tender texture and rich umami flavor.
Step 3
Next, add all the prepared seasoning ingredients (2 Tbsp Gochugaru, 1 Tbsp Mirin, 1 Tbsp Sugar, 1 Tbsp Soy sauce, 1 Tbsp Sesame oil, 1 Tbsp Doenjang, 1 Tbsp Minced garlic) into the pot. Pour in 3 cups of water. Bring to a boil over high heat and simmer for 5 minutes to allow the seasonings to dissolve well and infuse into the ingredients.
Step 4
Once the stew begins to boil, add the well-fermented kimchi, cut into bite-sized pieces, and reduce the heat to medium. Cover the pot and continue to simmer for about 15 minutes, allowing the radish to soften and the broth to deepen in flavor.
Step 5
Continue to simmer until the radish becomes translucent and the broth has reduced to a desirable consistency. Your delicious Mackerel and Radish Kimchi Stew is now complete! Enjoy it with a hot bowl of rice.
