Its savory flavor and crisp, refreshing texture are wonderfully appetite-stimulating. Today, I’ll show you how to easily make this delicious Gochu Muchim.

Main Ingredients

  • 6-7 mild chili peppers (such as Korean green chili peppers, Korean cucumber chili peppers, or Korean sweet peppers)

Seasoning Ingredients

  • 1 Tbsp Doenjang (Korean soybean paste)
  • 1/3 Tbsp Gochujang (Korean chili paste)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp plum extract (or maesilcheong)
  • 1/2 Tbsp sesame oil
  • 1/2 Tbsp oligosaccharide (or corn syrup/honey)
  • Sesame seeds, to taste

Cooking Instructions

First, prepare the chili peppers. It’s best to use mild varieties like Korean green chili peppers, Korean cucumber chili peppers, or Korean sweet peppers. Wash the peppers thoroughly under running water, pat them dry, and then cut them into bite-sized, thick pieces. If the peppers have many seeds, removing them can result in a cleaner texture.

Next, let’s make the delicious seasoning. In a bowl, combine 1 Tbsp of doenjang, 1/3 Tbsp of gochujang, 1/2 Tbsp of oligosaccharide, 1 Tbsp of plum extract, 1/2 Tbsp of sesame oil, and 1/2 Tbsp of minced garlic. Ensuring the right ratio of all seasoning ingredients is key to the perfect flavor.

Add the cut chili peppers to the prepared seasoning. Sprinkle in some sesame seeds. Gently mix with your hands, ensuring the seasoning coats the chili peppers evenly. After mixing, taste the dish. If you feel it needs a bit more flavor, you can add a tiny bit more doenjang to adjust the saltiness. Be careful not to mix too vigorously, as this can mash the peppers.
