  • 3 Potatoes (approx. 198g)
  • 1 can Spam (approx. 55g)
  • 10g Scallions
  • 0.4 tsp Salt
  • 3 Tbsp Cooking Oil
  • A sprinkle of Sesame Seeds

Cooking Instructions

Step 1

First, peel the potatoes and rinse them under running water. Then, slice them into thin rounds about 2mm thick, and cut these rounds into julienne strips of the same thickness. Slicing them this way helps them maintain their shape and prevents them from breaking apart when cooked.

Finely chop the scallions. Cut the Spam into julienne strips, about 3mm thick, similar to the potatoes. Since Spam is a pre-cooked product, you don’t need to fry it separately in oil; you can add it directly to the stir-fry.

Place the julienned potatoes in a bowl. Pour enough water to completely submerge the potatoes. Gently agitate the potatoes with your hands to wash off the starch from the surface. This step prevents the potatoes from sticking together or becoming mushy during stir-frying.

Rinse the potatoes by changing the water 3-4 times until the water runs clear. After thoroughly rinsing out the starch, drain them well in a colander. Properly draining the water ensures that oil splatters less when cooking and that the potatoes become crispier.

Heat a stir-fry pan and add the drained potatoes along with 3 tablespoons of cooking oil. Maintain medium heat on your stovetop and stir-fry the potatoes, stirring gently with chopsticks or a spatula, until they are tender. The potatoes are cooking well when they start to turn translucent.

Once the potatoes are sufficiently cooked, add 0.4 teaspoons of salt. Gently stir to distribute the salt evenly without mashing the potatoes. Continue to stir-fry so the seasoning is absorbed uniformly.

After the potatoes are seasoned, add the julienned Spam and stir briefly to combine. As Spam is already cooked, it doesn’t require prolonged cooking; just stir until it’s mixed with the potatoes.

Finally, add the chopped scallions and stir a couple more times. Turn off the heat immediately. Scallions can become discolored and mushy if cooked over high heat for too long, so adding them just before turning off the heat preserves their fresh aroma and texture.
