Introducing Shrimp Summer Rolls, a dish bursting with vibrant colors and fresh ingredients that will delight both your eyes and your taste buds. Main Ingredients

  • 3 sheets Rice paper
  • 6 large Shrimp, peeled and deveined
  • 35g Yellow bell pepper, thinly sliced
  • 24g Red bell pepper, thinly sliced
  • 2 fresh Perilla leaves (깻잎), thinly sliced

Dipping Sauce

  • 23g Sweet chili sauce

Cooking Instructions

Step 1

Begin by preparing all the ingredients for your fresh summer rolls. We’ll wash everything thoroughly before proceeding.

Wash the bell peppers and perilla leaves under running water. For the bell peppers, remove the seeds and slice them into thin, julienne strips. Roll the perilla leaves and slice them thinly.

Fill a pot with plenty of water and bring it to a boil over high heat. Boiling water is key to achieving perfectly cooked, plump shrimp.

Once the water is boiling rapidly, carefully add the prepared shrimp. Gently loosen them with a spoon to prevent clumping.

When the shrimp turn a vibrant red and are fully cooked, immediately remove them from the water. Rinsing the cooked shrimp under cold water will help maintain their firm, ‘bouncy’ texture.

Prepare the cooked shrimp for the rolls by removing their shells and tough tail ends. You can cut them in half lengthwise or leave them whole, depending on your preference for ease of eating.

Prepare a bowl of warm water for softening the rice paper. It should be comfortably warm to the touch, not scalding hot.

Here are all the ingredients, beautifully arranged and ready to be assembled. The colorful assortment is truly appetizing!

Briefly dip one sheet of rice paper into the warm water for about 10-15 seconds, just until it becomes pliable. Be careful not to oversoak it, as it can tear easily. Gently lay the softened rice paper flat on a plate or work surface.

Arrange the cooked shrimp attractively on the softened rice paper. Placing them in the center will make rolling easier.

Layer the sliced bell peppers and perilla leaves over the shrimp. Try to arrange them in a visually appealing way, perhaps alternating colors. Fold in the sides of the rice paper, then roll it up tightly from the bottom, ensuring the fillings are enclosed. (You can also roll it like a sushi roll!)
