Stumbled upon a cucumber in the back of your fridge? While it’s great for salads, today we recommend a simple ‘stir-fried cucumber’ that you can make in just one pan! It’s a versatile dish that works perfectly as a side dish for rice or even as a snack with drinks. Enjoy this incredibly easy recipe that’s ready in about 10 minutes!
Main Ingredients- 1 Cucumber
Salting the Cucumber- 1 tsp Salt
Seasoning- 1/2 Tbsp Minced Garlic
- 1 Tbsp Toasted Sesame Seeds

Cooking Instructions
Step 1
First, wash the fresh cucumber thoroughly under running water. Then, use a vegetable peeler or a paring knife to thinly peel the skin, and trim off the ends.

Slice the prepared cucumber thinly, about 0.5cm thick, and place all the slices into a frying pan. (You can also julienne it if you prefer.)

Add 1 teaspoon of salt to the sliced cucumber and gently toss it with your hands until evenly coated. Let it sit for about 10 to 15 minutes to salt-cure. This process draws out moisture, helping to maintain the cucumber’s crispiness.

Once the cucumber has softened and released its liquid, tilt the pan and pour away the accumulated water. This step is crucial for a clean-tasting stir-fry without excess moisture.

Now, add a moderate amount of cooking oil to the frying pan. Add the drained cucumber slices and stir-fry quickly over medium heat for 2-3 minutes, making sure to keep it moving to prevent burning. Cook until the cucumber becomes slightly translucent.

Once the cucumber is sufficiently stir-fried, add 1/2 tablespoon of minced garlic and 1 tablespoon of toasted sesame seeds for a nutty aroma.

Finally, give everything a quick toss one last time to ensure all ingredients are well combined. Once the seasoning is evenly distributed, turn off the heat and serve the delicious stir-fried cucumber attractively on a plate. Your tasty dish is ready!
