This recipe, featured on the show ‘Cheonggi Nuseol,’ highlights the beneficial combination of mung beans and perilla seeds, known to aid in managing blood pressure. The nutty flavor of perilla seeds complements the crisp texture of mung beans, creating a delicious and healthy dish.
Essential Ingredients- 1 bag fresh mung bean sprouts (approx. 200-300g)
- 2 Tbsp soy sauce
- 2 Tbsp ground perilla seeds
- 1 Tbsp minced garlic
- 2 Tbsp sesame seeds (toasted)
- 2 Tbsp sesame oil
- 1 handful chives (approx. 50g)
Cooking Instructions
Step 1
First, rinse the mung bean sprouts thoroughly under running water to remove any dirt or impurities. Drain them well in a colander. Bring a pot of water to a rolling boil. Add the prepared mung bean sprouts and blanch them for about 30 seconds to 1 minute. Be careful not to overcook, as they will lose their crisp texture. Immediately rinse the blanched sprouts in cold water to stop the cooking process and cool them down. Drain thoroughly, and gently squeeze out any excess water with your hands for best results.
Step 2
Next, trim the chives and cut them into bite-sized pieces, about 2-3 cm long. Blanch the cut chives in boiling water for about 20-30 seconds, just enough to slightly soften them while retaining their fresh aroma. Drain the blanched chives, rinse with cold water, and squeeze out any excess moisture. Set aside.
Step 3
Now, it’s time to combine all the ingredients. In a large bowl, add the well-drained mung bean sprouts and the prepared chives. Add the seasoning ingredients: 2 Tbsp soy sauce, 2 Tbsp ground perilla seeds, 1 Tbsp minced garlic, 2 Tbsp toasted sesame seeds, and 2 Tbsp sesame oil.

Finally, gently mix everything together with your hands, ensuring the seasoning is evenly distributed among the mung bean sprouts and chives. Mix delicately to avoid crushing the sprouts. Once everything is well combined and coated with the dressing, your delicious Mung Bean and Perilla Seed Salad is ready to serve!
