First, cut the pork neck into thick, bite-sized pieces, about 2cm thick. Cutting the meat into larger chunks for stew helps maintain a good texture.

Heat 2 tablespoons of perilla oil in a pan and stir-fry the cut pork until it’s lightly browned. Once the pork is browned, add a generous 3 tablespoons of gochujang. Stir-fry together over medium heat until the gochujang paste is well coated and absorbed by the meat. This step really brings out the deep flavor of the gochujang!
