  • 150g tender winter greens
  • 3 Tbsp red chili flakes (gochugaru)
  • 1 Tbsp minced garlic
  • 2 Tbsp plum extract (maesilcheong, for sweetness)
  • 2 Tbsp anchovy sauce (for umami)
  • 3 Tbsp fermented rice vinegar (gamshikcho, for tang)
  • Sesame oil (to finish)
  • Pinch of toasted sesame seeds

For Long-Term Storage of Winter Greens

  • Pinch of coarse salt (for blanching)
  • 1Kg winter greens
