  • 1 medium zucchini
  • 1/2 can (approx. 200g) Spam

Cooking Instructions

Wash the zucchini thoroughly and slice it lengthwise into thin strips. Avoid slicing them too thinly, as they can break apart easily during stir-frying. Aim for about 0.5cm thickness.

Slice the Spam into strips similar in length and thickness to the zucchini. Slicing the Spam first will allow its fat to render out, adding extra flavor to the dish.

Heat about 2 tablespoons of olive oil in a pan over low heat. Add the minced garlic and gently fry until fragrant and lightly golden, being careful not to burn it. This process creates garlic-infused oil, enhancing the overall aroma and taste.

Once the garlic is fragrant, add the sliced Spam to the pan and stir-fry over medium heat until it’s nicely browned and slightly crispy. The rendered Spam fat will make the dish even more savory.

When the Spam is golden brown, add the zucchini strips and continue to stir-fry together. Zucchini cooks quickly, so don’t overcook it with the Spam.

Add a pinch of salt to season. Since Spam is already salty, you can use very little salt or even omit it entirely, depending on your preference and the saltiness of your Spam.

Add 1 tablespoon of soy sauce for soup (Guk-ganjang) to add a glossy sheen and a boost of umami flavor. Guk-ganjang provides a deeper, more complex taste than regular soy sauce. Stir-fry briskly to combine all ingredients well.

Turn off the heat once the zucchini turns slightly translucent and is tender. Be careful not to overcook, as it can become mushy. Drizzle with about 1 teaspoon of sesame oil for an extra layer of aroma.
