Ingredients for Stir-fried Dried Squids

  • 70g Dried Squids (Kkottugi)
  • 50g Dried Anchovies (for broth)
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Water
  • 2 Tbsp Oligodang (Korean corn syrup)
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

First, prepare 70g (about one handful) of dried squids. Since dried squids can sometimes be a bit salty and firm, briefly soak them in cold water and then gently shake them to rinse. This helps to reduce the saltiness and remove any impurities.

Let’s make the sauce for the delicious stir-fried squids. In a small bowl, combine 1 tablespoon of soy sauce, 1 tablespoon of oligodang, and 1 tablespoon of water. Mix well. You can substitute oligodang with corn syrup if needed.

Heat 1.5 tablespoons of cooking oil in a frying pan over medium-low heat. Add the rinsed and drained dried squids and stir-fry them until they slightly puff up.

Once the squids have plumped up a bit, pour the prepared soy sauce mixture into the pan. Continue to stir-fry together, ensuring the sauce coats the squids evenly.

When the sauce has reduced and coated the squids nicely, add 50g (about one handful) of dried anchovies. It’s recommended to remove the innards of the anchovies to avoid any bitterness. Stir-fry the anchovies and squids together until the sauce is well absorbed.

Once the flavors have melded, add an additional 1 tablespoon of oligodang and stir-fry quickly. It’s important to keep stirring rapidly to prevent the sauce from burning, as it can stick and char quickly. Be mindful of the heat!

Finally, sprinkle 1 tablespoon of toasted sesame seeds over the mixture and toss lightly to finish. This adds a wonderful nutty aroma.
