Main Ingredients- 8 mini cucumbers (approx. 500-600g)
Pickling Brine- 2 cups vinegar (grain vinegar or apple cider vinegar recommended)
- 1 cup granulated sugar
- 1 cup water
- 2 cups vinegar (grain vinegar or apple cider vinegar recommended)
- 1 cup granulated sugar
- 1 cup water
Cooking Instructions
Step 1
Thoroughly wash the mini cucumbers under running water. Trim off the stem ends from both sides of each cucumber. This is an important step to remove any residual pesticides and ensure the freshness of your pickles.
Step 2
Slice the prepared cucumbers thinly, about 0.5cm (or 1/4 inch) thick. Slicing them thin allows the pickling brine to penetrate the cucumbers effectively, ensuring a flavorful pickle. Try to keep the slices consistent in thickness for even pickling.
Step 3
In a saucepan, combine 2 cups of vinegar, 1 cup of sugar, and 1 cup of water. Heat over medium heat, stirring occasionally, until the sugar is completely dissolved and the mixture comes to a boil. You can add a bay leaf or a few peppercorns for extra aroma if desired.
Step 4
Once the brine is boiling, remove it from the heat and let it cool slightly. Pour the cooled brine over the sliced cucumbers in a clean jar or airtight container. Make sure the cucumbers are fully submerged in the brine. Seal the container and refrigerate. Your pickles will be ready to enjoy in about 3-4 days, and they can be stored in the refrigerator for up to a month!
