Key Ingredients

  • 1 ripe avocado
  • 2 fresh eggs
  • 1 piece of mentaiko (salted cod roe)
  • Crumbled dried seaweed (gim/nori) to taste
  • Sesame oil to drizzle
  • Toasted sesame seeds for garnish

Cooking Instructions

Step 1

Avocado is a climacteric fruit, meaning it ripens after harvesting, and tastes best when allowed to mature at room temperature. For optimal flavor and texture, ripen avocados at room temperature, ideally between 10-15°C (50-59°F). Underripe avocados can be astringent and may cause stomach upset if eaten raw, so always ensure they are fully ripe before consuming! (Tip: To speed up ripening, wrap the avocado in aluminum foil or brown paper and leave it at room temperature.)

Step 1

Step 2

Once your avocado is perfectly ripe, insert a knife into the center, reaching the pit, and slice all the way around. Gently twist the two halves with your hands, and they should separate easily. A well-ripened avocado will come apart smoothly.

Step 2

Step 3

Carefully pierce the pit with the knife blade and twist to remove it. Then, use a spoon to scoop out the creamy avocado flesh. Your preparation of this ‘butter of the forest’ is now complete!

Step 3

Step 4

Dice or slice the prepared avocado into bite-sized pieces.

Step 4

Step 5

Now, gather your rice, eggs, and crumbled seaweed. This recipe is very flexible, so feel free to adjust the ingredients to your liking for a personalized taste! (For 2 servings, use 2 eggs.)

Step 5

Step 6

Let’s prepare the star ingredient: mentaiko. We’ll use one large piece for this recipe.

Step 6

Step 7

Carefully slice the mentaiko in half lengthwise with a knife. Gently scrape out the roe from inside with the knife. Your mentaiko is now ready for our avocado bibimbap!

Step 7

Step 8

Time for plating! Place warm cooked rice into a bowl. Top generously with the sliced avocado and crumbled seaweed. For an extra touch, consider frying the egg until crispy around the edges before placing it on top. Your healthy and delicious bibimbap is coming together beautifully!

Step 8

Step 9

Artfully arrange the mentaiko roe over the toppings. Finish with a drizzle of savory sesame oil and a sprinkle of toasted sesame seeds. Your wholesome and satisfying diet meal is complete!

Step 9

Step 10

Enjoy this dish as is, or add fresh sprouts for an extra crunch and freshness. If you don’t have mentaiko, a splash of soy sauce will also create a wonderfully tasty avocado soy sauce rice bowl.
