Seasoning Ingredients

  • 1 tsp MSG-enhanced salt (or regular salt)
  • A pinch of toasted sesame seeds
  • A tiny drizzle of perilla oil (optional)

First, prepare the crown daisy. Remove any tough stems. If the leaves are very long, cut them in half to a more manageable size. Rinse them thoroughly under running water to remove any dirt or debris. For extra freshness, you can soak them in water with a little vinegar for about 5-10 minutes before rinsing.

Bring a pot of water to a boil. Add a pinch of coarse salt to the boiling water; this helps the crown daisy retain its vibrant green color and slightly softens it. Add the stems first and blanch them briefly, then quickly add the leaves and blanch for only about 10-20 seconds. Be careful not to overcook, as they can become mushy. Immediately rinse the blanched crown daisy under cold running water to stop the cooking process and preserve its crisp texture.

After rinsing in cold water, gently squeeze out as much excess water as possible with your hands. If too much water remains, the seasoning won’t adhere well, and the dish might taste bland. Squeeze them lightly, like wringing out a cloth.

Place the prepared crown daisy in a bowl. Add the MSG-enhanced salt (or regular salt) and gently mix with your hands until seasoned to your liking. Then, add the toasted sesame seeds. If you want to emphasize the natural, herbaceous aroma of the crown daisy, feel free to omit the sesame seeds and perilla oil.
