Hearty Braised Flatfish with Tender Potatoes: A Perfect Home-Style Dish

Main Ingredients- 2 prepared flatfish
- 2 medium potatoes
- 1 onion
- 1 stalk of green onion
- 1 red chili pepper
Braising Sauce- 2 Tbsp soy sauce for soup (guk-ganjang)
- 2 Tbsp red pepper flakes (gochugaru)
- 2 Tbsp minced garlic
- 2 Tbsp oligosaccharide (or corn syrup)
- 2 cups anchovy broth
- 3 Tbsp mirin (rice wine)
- 2 Tbsp soy sauce for soup (guk-ganjang)
- 2 Tbsp red pepper flakes (gochugaru)
- 2 Tbsp minced garlic
- 2 Tbsp oligosaccharide (or corn syrup)
- 2 cups anchovy broth
- 3 Tbsp mirin (rice wine)
Cooking Instructions
Step 1
First, rinse the flatfish thoroughly and pat dry with paper towels. Peel the potatoes and slice them into round, flat pieces about 1.5 cm thick (too thin and they might fall apart!). Slice the green onion diagonally, and slice the red chili pepper similarly. (Adding a bit of spicy green chili pepper will enhance the flavor!)
Step 2
Prepare a heavy-bottomed pot or a braising pan. Arrange the sliced potatoes evenly on the bottom of the pot. Then, place the prepared flatfish attractively on top of the potatoes.

Now, let’s make the delicious braising sauce! In a bowl, combine 2 Tbsp soy sauce for soup, 2 Tbsp red pepper flakes, 2 Tbsp minced garlic, 2 Tbsp oligosaccharide, and 3 Tbsp mirin. Mix them well. Preparing the sauce in advance helps the flavors meld beautifully. Pour this sauce evenly over the flatfish. Finally, add 2 cups of anchovy broth, enough to partially cover the ingredients.
Step 4
Cover the pot and bring to a simmer over medium heat. If you start with high heat, reduce it to medium once it boils to prevent burning the ingredients. Let it simmer gently.

When the potatoes and flatfish are cooked and tender, add the sliced onion. Spoon some of the sauce over the flatfish and potatoes intermittently as it simmers. This process allows the sauce to penetrate deeply, resulting in a much more flavorful dish.

Once the sauce has thickened to a rich, reduced consistency and the ingredients look glossy, add the sliced green onion and red chili pepper. Simmer for a short while longer. The aroma from the onion and chili will add even more depth to the flavor. After turning off the heat, let the dish rest for a few minutes to allow the flavors to fully harmonize.
