Main Ingredients

  • 18 Whiteleg shrimp (peeled and deveined)
  • 1 cup chopped chives (approx. 30g)
  • 1/4 small onion, finely minced (approx. 30g)
  • 3 Tbsp potato starch (approx. 30g)

Cooking Instructions

First, prepare 18 whiteleg shrimp that have been frozen. Thaw them by soaking them in water. Once thawed, rinse them lightly under running water.

After thawing, remove the heads and shells from the shrimp, and also trim the sharp tips of the tails. Rinse the cleaned shrimp and drain them thoroughly in a sieve to remove excess water. This is important for the mixture to bind well.

Place the drained shrimp on a cutting board and press them firmly with the flat side of your knife until they are mashed and lose their distinct shape. Mash them until they are mostly broken down. This step helps retain a pleasant chewy texture in the shrimp.

Next, finely mince the mashed shrimp with the knife. Avoid mincing them too finely; leaving some texture will result in a more enjoyable bite.

Transfer the mashed shrimp to a mixing bowl. Add 1 Tbsp of cooking wine to eliminate any fishy odor, 1/3 tsp of salt for flavor, and a pinch of black pepper. Mix everything thoroughly with a spoon until well combined, forming a paste.

Add the finely minced onion (1/4 small onion) and 1 cup of chopped chives (measured with a 200ml cup) to the shrimp mixture. Mix well to incorporate the chives. The fragrant aroma of chives will enhance the overall flavor.

Check the consistency of the mixture and add 3 Tbsp of potato starch. Mix well. The potato starch will help bind the ingredients, making it easier to shape the balls and resulting in a chewier texture when cooked. Knead the mixture until all ingredients are evenly distributed.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Scoop about half a tablespoon of the chive shrimp mixture with a spoon and place it in the hot oil. Use another spoon to gently flatten or shape the mixture into small patties or balls as you drop them into the pan. Pressing with a spoon helps create a more natural shape.

Reduce the heat to medium-low and cook slowly, being careful not to burn them. It’s important to cook them thoroughly on the inside.

To achieve a crispier texture, tilt the pan slightly to gather the oil to one side, then spoon the hot oil over the shrimp balls as they cook. This technique resembles shallow-frying and results in a crispy exterior and moist interior.
