Aromatic Garlic Butter Pasta

Experience a deeply flavorful and moist pasta dish, elevated by a generous amount of garlic. This recipe is simple yet creates a wonderfully satisfying meal.
Garlic Butter Pasta Ingredients- 4-5 cloves garlic, thinly sliced
- 2 dried red chilies (peperoncino) or bird’s eye chilies, deseeded and broken
- 1 Tbsp butter
- 3 Tbsp cooking oil (like olive oil or vegetable oil)
- Pinch of black pepper
- 1 Tbsp soy sauce
- 1 tsp oyster sauce
- Grated Parmesan cheese, for garnish (optional)
- 100g pasta
- 500ml water
- 1/3 Tbsp salt (for boiling pasta)
- 1 ladle of pasta water
Cooking Instructions
Step 1
First, bring 500ml of water to a rolling boil in a large pot, adding 1/3 Tbsp of salt. Once boiling, add 100g of pasta and cook for about 8-10 minutes, or 1-2 minutes less than the package instructions. It’s a good idea to stir occasionally to prevent the pasta from sticking together.
Step 2
While the pasta is cooking, prepare the sauce. Heat 3 Tbsp of cooking oil in a deep pan or wok over medium-low heat. Add the thinly sliced garlic and fry gently until it turns a light golden brown. The key here is to infuse the oil with a subtle garlic aroma without burning the garlic.
Step 3
Once the garlic is fragrant and lightly browned, add the 2 broken dried chilies (seeds removed) to the pan. Sauté for about 3 more minutes, allowing the spicy aroma to meld with the garlic-infused oil. You can adjust the amount of chili to your preference.
Step 4
Now, add 1 Tbsp of butter to the pan and let it melt. The butter will add a lovely richness to the sauce. Drain the cooked pasta, reserving about a ladleful of the pasta water, and add the pasta directly to the pan. Toss well to coat the pasta with the garlic oil and melted butter.
Step 5
To achieve the perfect sauce consistency, add 1 ladle of the reserved pasta water to the pan. Stir in 1 Tbsp of soy sauce and 1 tsp of oyster sauce. Mix everything thoroughly until the pasta is evenly coated. Taste the pasta and adjust seasoning if needed, adding a tiny bit more salt or soy sauce/oyster sauce if desired. Be careful not to make it too salty.
Step 6
To serve, twirl the pasta onto your plate using a fork or chopsticks. Finish with a pinch of freshly ground black pepper for added aroma, and a sprinkle of grated Parmesan cheese if you like (this is optional). Your delicious Garlic Butter Pasta is now ready to be enjoyed!
