Immunity Boosting Mushroom Japchae with Zucchini Noodles
A Healthy and Flavorful Japchae Made with Mushrooms and Zucchini Noodles, Featuring Oyster and King Oyster Mushrooms
This is a healthy and nutritious Japchae recipe that utilizes the vitamin C-rich King Oyster mushrooms, cancer-fighting Oyster mushrooms, and delightfully textured zucchini noodles. It’s a perfect dish for special occasions or a wholesome home-cooked meal!
Main Ingredients- 100g Pork loin
- 1/4 Zucchini
- 1/4 Onion
- 1/4 Bell pepper
- 1 handful King Oyster mushrooms
- 1 handful Oyster mushrooms
Seasoning- 0.5 Tbsp minced garlic
- 1 Tbsp soy sauce
- 1 Tbsp perilla oil
- 1 Tbsp oyster sauce
- 0.5 Tbsp minced garlic

Cooking Instructions
Step 1
First, prepare 100g of pork loin. Place the pork loin in a bowl and add 0.5 Tbsp of minced garlic, 1 Tbsp of soy sauce, and 1 Tbsp of perilla oil for marinating. (We’ll add the oyster sauce later!) Gently mix with your hands, ensuring the marinade is evenly distributed into the pork.
Step 2
Now it’s time to cook the marinated pork. Preheat a pan over medium-low heat for about 30 seconds, then add the marinated pork and stir-fry for approximately 1 minute. Use chopsticks or a fork to break apart any clumps as you cook, which helps it cook more evenly. Once the pork is almost cooked through, set it aside on a separate plate.
Step 3
While the pork is cooking, let’s prepare the vegetables. Using a julienne peeler, thinly slice the 1/4 zucchini lengthwise to create zucchini noodles. Prepare 1 handful of King Oyster mushrooms, and julienne the 1/4 onion and 1/4 bell pepper. For the 1 handful of Oyster mushrooms, it’s easiest to simply shred them lengthwise with your fingers. Try not to cut the mushrooms too thinly; a slightly thicker cut will give them a better texture.
Step 4
Now, set the cooked pork aside and prepare to stir-fry the vegetables. Return the pan to medium-low heat and add the julienned onion. Stir-fry for about 30 seconds until the onion becomes translucent. This will release the onion’s natural sweetness, enhancing the overall flavor profile.
Step 5
Once the onion is slightly softened, add the prepared King Oyster mushrooms and bell pepper. Increase the heat to medium and stir-fry together for about 3 to 4 minutes. As the mushrooms cook, they will release their natural moisture, so there’s no need to add extra oil. The vegetables should become tender, and the mushroom flavors will start to meld.
Step 6
Finally, turn the heat up to high! Add the zucchini noodles and 1 Tbsp of oyster sauce to the pan. Stir-fry quickly for about 1 minute. Cooking on high heat for a short time helps retain the zucchini’s crispness while allowing the oyster sauce to coat all the ingredients harmoniously. Once everything is well combined, turn off the heat. Taste the Japchae and adjust the oyster sauce if needed, according to your preference, for a perfectly seasoned dish.
