Melt-in-Your-Mouth Special Beef Jeon Recipe

Beef Jeon (Yukjeon) is an indispensable dish for any holiday spread! Its savory flavor is so irresistible that it disappears from the plate almost instantly. It’s one of the simplest and easiest jeon dishes to make, and we’ve added our family’s secret tips to make it even more delicious. Let’s get cooking!

Recipe Info

  • Category : Main dish
  • Ingredient Category : Beef
  • Occasion : Bar food
  • Cooking : Pan-fry
  • Servings : More than 6 servings
  • Cooking Time : Within 15 minutes
  • Difficulty : Anyone

Essential Ingredients

  • 500g beef top blade (sliced thinly for jeon)
  • 4 eggs (can be adjusted based on the amount of beef)
  • 2 Cheongyang chili peppers (optional, for a touch of spice)
  • 5 Tbsp glutinous rice flour (for a crispy and chewy texture)
  • 1 Tbsp soy sauce (for marinating the beef)
  • 2 Tbsp cooking wine (Mirin) (to remove gaminess and enhance flavor)
  • Pinch of black pepper (for marinating the beef)
  • Generous amount of cooking oil (to prevent sticking and burning)

Cooking Instructions

Step 1

First, prepare all the ingredients needed for the beef jeon. Ensure your beef slices are ready to have their blood patted dry with paper towels.

Step 1

Step 2

Using paper towels, gently press both sides of the beef slices to thoroughly remove any excess blood. Removing the blood ensures a clean taste without any gamey odor.

Step 2

Step 3

Add the marinating ingredients to the blotted beef: 1 Tbsp soy sauce, 2 Tbsp cooking wine (Mirin), and a pinch of black pepper. These seasonings will infuse the beef with a subtle, delightful flavor.

Step 3

Step 4

Gently knead the seasoned beef with your hands for about 10 minutes, allowing the marinade to penetrate evenly. This step is crucial for tenderizing the meat and infusing flavor.

Step 4

Step 5

Finely mince the Cheongyang chili peppers after washing them thoroughly. Removing the seeds will help control the spiciness. If you enjoy a spicier kick, feel free to mince the seeds along with the peppers.

Step 5

Step 6

In a separate bowl, whisk the 4 eggs, breaking the yolks and ensuring they are well beaten. Prepare 5 Tbsp of glutinous rice flour in another small bowl.

Step 6

Step 7

Take a piece of marinated beef and lightly coat both sides with glutinous rice flour. Avoid applying too thick a layer, as this can make the jeon feel heavy; a thin coating is best for a delicate texture.

Step 7

Step 8

Dip the glutinous rice flour-coated beef slice into the beaten egg mixture, ensuring it is evenly coated. This egg wash will help the jeon cook to a beautiful golden color.

Step 8

Step 9

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Carefully place the egg-coated beef slices into the hot oil, making sure they don’t overlap.

Step 9

Step 10

Sprinkle a small amount of the minced Cheongyang chili peppers on top of each beef slice. Cook over medium-low heat, turning gently, until both sides are golden brown and cooked through. Be careful not to use high heat, as this can burn the outside before the inside is cooked.

Step 10

Step 11

Once both sides are beautifully golden brown, your Beef Jeon is ready! You’ll enjoy a wonderfully savory and satisfying dish with no greasiness. It’s best served warm!
