  • 1 ripe, small tomato
  • 1 cup tomato spaghetti sauce
  • 300g thinly sliced pork belly (samgyeopsal) or pork neck
  • 1/4 onion
  • 1 stalk green onion

Cooking Instructions

First, wash the ripe tomato thoroughly, remove the stem, and roughly chop it into about 1cm pieces. In a bowl, combine the chopped tomato with 1 cup of store-bought tomato spaghetti sauce and mix well. This step helps to meld the fresh taste of the tomato with the richness of the sauce for a deeper flavor profile.

Peel and finely mince the onion. Separate the white and green parts of the green onion, then thinly slice them. (The white parts will be used for aroma, and the green parts for garnish later.) Heat a pan over medium heat, add 1 Tbsp of cooking oil, then add the minced garlic, the sliced white parts of the green onion, and the minced onion. Sauté until fragrant and the aromatics become translucent, being careful not to burn them. Once you can smell the fragrant garlic and onion, proceed to the next step.

Add the 300g of thinly sliced pork belly (or pork neck) to the pan. Season it with 1/2 tsp of herb salt. Stir-fry over medium-high heat, breaking up any clumps of meat with your spatula. Cook until the pork is completely cooked through and no longer pink. This process helps to eliminate any porky smell and enhances the overall flavor.

Once the pork is fully cooked, pour in the prepared tomato and tomato spaghetti sauce mixture into the pan. Stir everything together to ensure the ingredients are evenly coated with the sauce. Cook for about 1-2 minutes, allowing the sauce to coat all the ingredients.

When the sauce begins to bubble, reduce the heat to medium-low. Let it simmer and thicken to your desired consistency, which should take about 2-3 more minutes. Finally, stir in the sliced green parts of the green onion for a fresh finish. Your delicious Tomato Pork Stir-fry is now ready! Serve it over warm rice for a hearty meal, or mix it with cooked pasta for a fantastic dish.
