- 1 Tbsp vinegar
- 2 Tbsp maesilcheong (plum extract)
- 1/2 Tbsp minced garlic
- 1/2 Tbsp crushed sesame seeds
- A little sesame oil
Cooking Instructions
Step 1
Briefly blanch the fresh squid in boiling water for about 20 seconds. Immediately transfer it to an ice bath to cool it down. This quick blanching helps maintain the squid’s firm and chewy texture.
Step 2
Once the squid is cooled, drain it thoroughly and slice it thinly into strips. Cutting it thinly is key to achieving a pleasant texture when mixed with the rice and vegetables.
Step 3
Prepare all your vegetables: thinly slice the onion, cabbage, cucumber, and carrot. Wash the lettuce and perilla leaves, pat them dry, and tear them into bite-sized pieces. Aim for similar thickness in your vegetable cuts for a harmonious presentation and taste.
Step 4
Now, let’s make the flavorful gochujang sauce. In a small bowl, combine 3 tablespoons of gochujang, 1 tablespoon of vinegar, 2 tablespoons of maesilcheong, and 1/2 tablespoon of minced garlic. Stir well until smooth. Finish with 1/2 tablespoon of crushed sesame seeds and a drizzle of sesame oil for added aroma and flavor.
Step 5
Assemble your rice bowl. Place 2 bowls of warm cooked rice into a serving bowl. Artfully arrange the thinly sliced vegetables, the prepared squid strips, and a generous topping of fresh bean sprouts over the rice. Don’t be shy with the vegetables – they add freshness and crunch!
Step 6
Add your prepared spicy gochujang sauce to the bowl as desired. Mix everything together thoroughly with the rice and toppings. Your delicious and abundant squid sashimi rice bowl is ready to be enjoyed! Dig in and savor the fresh flavors!
