Main Ingredients- 300g pork shoulder, cut into bite-sized pieces
- 1 Tbsp ginseng wine (to remove gamey odor and enhance flavor)

- 1/2 onion, thinly sliced
- 1/3 red bell pepper, thinly sliced
- 2 stalks green onions, cut into 2cm lengths
- Pinch of toasted sesame seeds (for garnish)
Seasoning Ingredients- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp minced garlic
- 1 Tbsp sugar (adjust to taste)
- 2 Tbsp gochugaru (Korean chili flakes, adjust to taste)
- 1 Tbsp soy sauce
- 1 Tbsp plum extract (for sweetness and shine)
- A little sesame oil (for nutty flavor)
- Pinch of black pepper (for aroma)

Cooking Instructions
Step 1
First, prepare the vegetables. Slice the onion and red bell pepper into large, bite-sized pieces. Cut the green onions into segments about 2cm long. Slicing them this way helps maintain a pleasant texture when stir-fried.
Step 2
Place the bite-sized pork shoulder pieces (about 3cm) into a bowl. Add 1 tablespoon of ginseng wine, which is excellent for removing gamey odors, and a pinch of black pepper. Mix well and let it marinate for 10 minutes. You can substitute with rice wine (cheongju) if ginseng wine is unavailable.
Step 3
Let’s make the seasoning sauce that will determine the flavor of your Jeyuk Bokkeum. In a bowl, combine 2 tablespoons of gochujang, 1 tablespoon of minced garlic, 1 tablespoon of sugar, 2 tablespoons of gochugaru, 1 tablespoon of soy sauce, 1 tablespoon of plum extract, and a pinch of black pepper. Mix thoroughly. Adjust the amount of sugar or gochugaru to suit your preference for the perfect balance of spicy and sweet.
Step 4
Now, it’s time to stir-fry. Heat a pan over medium heat and add a little cooking oil. Add the marinated pork and stir-fry. It’s important to break up any clumps of meat and cook until the pork is no longer pink on the outside.
Step 5
Once the pork is about halfway cooked, add the prepared onion and red bell pepper. Stir-fry them together with the pork. When the vegetables start to soften slightly, add all the prepared seasoning sauce. Increase the heat to high and stir-fry quickly. The key is to stir-fry rapidly so the sauce coats the meat and vegetables evenly.
Step 6
When the dish is almost done, add the cut green onions and stir-fry briefly, just enough to incorporate them. Avoid overcooking the green onions to maintain their crispness.
