Main Ingredients

  • 2 Semi-dried frozen flatfish (thawed)
  • 3-4 Potatoes (medium-sized)
  • 1 Onion (medium-sized)

Cooking Instructions

First, peel the potatoes and cut them into large chunks. Soak the cut potatoes in cold water for about 5 minutes to remove excess starch, then drain them. Place the potatoes in a pot, add 2 cups of kelp stock and 1 tablespoon of soy sauce. Bring to a boil over high heat and cook for about 5-7 minutes, or until the potatoes are halfway cooked.

Once the potatoes are partially tender, gently place the semi-dried flatfish on top of the potatoes. Handle the fish carefully to prevent it from breaking apart during cooking.

Now, let’s prepare the delicious braising sauce. In a small bowl, combine the remaining 2 tablespoons of soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of onion syrup, 1/2 tablespoon of minced garlic, 1 teaspoon of ginger paste, 1 teaspoon of lemon juice, and 1 tablespoon of cooking wine. Mix well to create the sauce.

Peel the onion and slice it thickly. Arrange the sliced onions over the flatfish. Pour the prepared braising sauce evenly over the fish and onions. Cover the pot and simmer over medium-low heat for about 15-20 minutes, or until the flatfish is fully cooked and the sauce has thickened. Spooning some of the sauce over the fish occasionally will enhance the flavor.

When the flatfish is tender and the sauce has reduced to your desired consistency, finely chop the washed scallions and sprinkle them over the braised flatfish as a garnish. This will add both color and a fresh aroma.

Finally, cover the pot again and turn the heat to very low. Let it steam for 1-2 minutes to allow the scallion flavor to infuse. Turn off the heat, let it rest briefly, and then serve the delicious braised flatfish with potatoes in a dish. Enjoy it with a warm bowl of rice!
