Ingredients- Kongguksu noodles or somen noodles for 2 servings (approx. 200-250g)
- 1/2 block firm tofu (approx. 150g)
- 1 cup unsweetened soy milk (200ml)
- 1 cup milk (200ml)
- A little cucumber, thinly sliced for garnish
- A few cherry tomatoes, halved (or 1/4 regular tomato)
- 1 Tbsp roasted pine nuts
- 1 Tbsp toasted sesame seeds
- Sea salt, to taste

Step 1
Begin by preparing all your ingredients. Having everything ready makes the cooking process smooth and enjoyable. Wash and slice the cucumber thinly for garnish. Halve the cherry tomatoes or cut a regular tomato into small wedges.

Gently rinse the half block of tofu under cool water. Using fresh, good-quality tofu will ensure the best flavor and texture for your Kongguksu broth.

In a blender, combine the rinsed tofu, roasted pine nuts, toasted sesame seeds, soy milk, and milk. Blend until the mixture is completely smooth and creamy. This might take about 1-2 minutes, depending on your blender’s power. For a silkier texture, ensure all ingredients are well incorporated.

Pour the blended mixture into a bowl. Season generously with sea salt to your preference. It’s best to taste and adjust the saltiness gradually. Cover the bowl and refrigerate for at least 30 minutes to chill thoroughly. A cold broth is essential for refreshing Kongguksu.
