Chestnut Latte & Mochi Ball Ingredients

  • 10 steamed chestnuts
  • 300ml milk
  • 1 pinch salt
  • 3 Tbsp honey
  • A little castella cake
  • A little cinnamon powder

First, let’s prepare the chestnuts for both the latte and the mochi balls. Take your 10 steamed chestnuts and, while they are still hot, press them through a sieve to create a smooth puree. Pureeing them while hot ensures a lump-free, fine texture. This chestnut puree will be the base for your mochi ball dough.

To the sieved chestnuts, add a pinch of salt and 3 tablespoons of honey. Gently knead the mixture with your hands until it forms a smooth dough. The salt enhances the sweetness, while the honey provides a subtle sweetness and helps the dough bind together. If the dough is too sticky, add a little more chestnut; if it’s too stiff, add a tiny bit of milk to reach the desired consistency.

Shape the kneaded chestnut dough into small, round balls, about bite-sized. These will be your lovely chestnut mochi balls. You can even have fun making them into cute character shapes for the kids! You’ll end up with delightfully chewy and adorable mochi balls.

Warm 300ml of milk in the microwave (about 30 seconds to 1 minute). Combine the warmed milk and the mashed chestnuts in a blender and blend until smooth and creamy. A sprinkle of cinnamon powder on top will enhance the aroma and flavor. And just like that, your warm and creamy chestnut latte is ready!
