Follow along for my husband’s special Tom Yum Goong recipe! I’ll also share tips on how to use up leftover vegetables from your fridge.

Recipe Info

  • Category : Soup / Broth
  • Ingredient Category : Others
  • Occasion : Bar food
  • Cooking : Boil / Simmer
  • Servings : 2 servings
  • Difficulty : Beginner

Main Ingredients

  • 1 Tbsp Tom Yum Goong paste (adjust to taste)
  • 1/4 Kabocha squash, cut into bite-sized pieces
  • 1/2 Leek, diagonally sliced
  • 1/2 Onion, thinly sliced
  • 1 pack King oyster mushrooms, trimmed and separated
  • 6-8 Cherry tomatoes, halved
  • 100g Frozen shrimp, thawed
  • 50g Fish balls, sliced
  • 1/2 packet Jin Ramen or Shin Ramen soup base
  • 1/3 packet Ramen noodles (noodles only)
  • 550ml Water

Cooking Instructions

Step 1

First, pour 550ml of water into a pot and bring it to a boil. Once boiling, add 1/2 packet of ramen soup base and 1/3 of the ramen noodles. Boil them together. The reason for boiling the noodles here is to infuse their flavor and body into the broth, and also to prepare noodles for serving later. When the noodles are cooked to your liking, carefully remove them from the pot and set aside.

Step 1

Step 2

Next, add all the prepared ingredients to the simmering broth. This includes the thawed shrimp, cut kabocha squash, bok choy for a crisp texture (optional), king oyster mushrooms, and sliced fish balls. Think of this as a ‘fridge clean-out’ – adding various vegetables will make your Tom Yum Goong even richer and more satisfying.

Step 2

Step 3

Now, add 1 tablespoon of Tom Yum Goong paste, the heart of the dish. If you desire a deeper and more intense flavor, feel free to add a little more, tasting as you go. Aim for a good balance of spicy and sour notes.

Step 3

Step 4

For a touch of sweetness and fresh acidity, add the halved cherry tomatoes. As they cook, the tomatoes will naturally release their flavor into the soup, enhancing the overall taste of the Tom Yum Goong.

Step 4

Step 5

Once everything is simmering beautifully, return the noodles that you set aside earlier to the pot. Let it simmer for another moment, and your delicious Tom Yum Goong is ready! For an extra aromatic touch, consider garnishing with fresh cilantro or a squeeze of lime.
