We’re making delicious pancakes loaded with everyone’s favorite shrimp! These shrimp pancakes are incredibly easy to make, bursting with the wonderful aroma and flavor of fresh shrimp. Even though I got a small burn on my arm while making them, everyone said they were absolutely delicious, making all the effort worthwhile. Try making these for your next home party!

  • 100 fresh shrimp (peeled and deveined)
  • 1 onion (finely julienned)
  • 1 carrot (finely julienned)
  • 15 eggs

  • Pinch of salt
  • Pinch of starch (potato or corn)
  • Vegetable oil, for frying

Cooking Instructions

Step 1

First, remove the heads and shells from all the shrimp. Then, make a shallow cut along the middle of the shrimp’s back, being careful not to cut all the way through; you want the body to remain connected. Flatten the shrimp by pressing down gently, as shown in the illustration. Lightly sprinkle a pinch of salt over each flattened shrimp. Let them sit for about 30 minutes to marinate.

Peel and finely julienne the onion and carrot. Aim for consistent thickness so they cook evenly and look appealing.

Evenly sprinkle starch over the salted shrimp. The starch will help the egg batter adhere better and create a crispier texture when fried.

In a bowl, whisk together the 15 eggs with 2 teaspoons of salt (adjust salt as the shrimp are already seasoned). Add the julienned carrots and onions to the egg mixture and stir well. Now, dip the starch-coated shrimp into this vegetable-egg batter, ensuring they are fully coated.

Heat a generous amount of vegetable oil in a non-stick skillet over low heat. Carefully place the battered shrimp onto the hot skillet. Artfully arrange a small amount of the carrot and onion mixture on top of each shrimp, as depicted.

Cook the shrimp and vegetable pancakes until they are golden brown and cooked through on both sides. It’s crucial to cook these over low heat, allowing them to cook slowly and thoroughly without burning. Patience is key for a perfectly cooked pancake.
