  • 1 whole chicken (medium-sized or young chicken)
  • 15 whole garlic cloves
  • 15 jujubes (dried red dates)
  • 1 bunch scallions (cut into large pieces)
  • 800ml water
  • 1 cup nurungji (scorched rice, store-bought or homemade)

Today, we’re going to make a special delicacy with a wonderfully savory flavor: Nurungji Dakbaeksuk. It’s a perfect dish for a hearty, revitalizing meal.

First, prepare the chicken. Open the cavity and remove the innards. Trim any excess skin and fat from the neck area, as well as the tail and surrounding fat. Also, trim the tips of the wings. Rinse the chicken thoroughly under running water.

Now, place the prepared chicken in a pot and add water until it fills about two-thirds of the pot. Add the whole garlic cloves and jujubes. Bring the mixture to a boil over high heat, then reduce the heat to medium-low, cover, and simmer for about 30 minutes, or until the chicken is cooked through.

Once the chicken is almost cooked, add the nurungji to the pot. Continue to simmer for another 15 minutes, allowing the nurungji to soften and release its flavor. This will create a delicious, savory broth. For an extra layer of aroma, add the scallions in the last few minutes of cooking.
