Ingredients for Whelk & Chive Bibimjang and Bibimbap

  • 1 bowl of cooked rice
  • 300g canned whelks (2 cans)
  • 60g fresh chives (young chives preferred)

Seasoning Sauce

  • 4 Tbsp anchovy sauce (fish sauce)
  • 2 Tbsp mirin (or cooking wine)
  • 1 Tbsp sugar
  • 2 Tbsp gochugaru (Korean chili flakes, fine)
  • 1 Tbsp water
  • 1 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds

Cooking Instructions

First, prepare the canned whelks. Drain the liquid from the can. Gently rinse the whelks under hot water to remove any canned flavor, then drain them thoroughly. Cut the whelks into bite-sized pieces, about 1.5 cm in length.

Wash the fresh chives and pat them dry. Cut them into approximately 3-4 cm lengths. Finely mince the garlic. Having all ingredients prepped before cooking makes the process much smoother.

Now, let’s make the flavorful sauce. In a small pot, combine 4 Tbsp anchovy sauce, 2 Tbsp mirin, 1 Tbsp sugar, 2 Tbsp gochugaru, and 1 Tbsp water. Heat over medium-low heat and gently stir for about 1-2 minutes, just until the sauce slightly simmers. Be careful not to overcook, as it can become too salty.

Remove the sauce from the heat and let it cool completely. It’s important to use the sauce only after it has cooled down; otherwise, the whelks might become mushy. Once cooled, pour the sauce over the prepared whelks and mix well.

Finally, add 1 Tbsp minced garlic, the cut chives, 1 Tbsp sesame oil, and a pinch of toasted sesame seeds. Gently mix everything together until the whelks and chives are evenly coated. Your delicious Buchu Golbaengi Jang is now ready! (Tip: This recipe makes about 2 servings using two cans of whelks.)
