Ingredients

  • 5 large eggs
  • 1 imitation crab stick (cut into small pieces)
  • 2-3 Tbsp mozzarella cheese
  • 1 slice cheddar cheese
  • A little bit of green onion (chopped for garnish)

Seasoning & Broth

  • 150ml warm anchovy-kelp broth
  • 1 tsp salt (or to taste)
  • 1 Tbsp cooking wine (like Mirin)
  • A little chili sauce (for drizzling)

Cooking Instructions

First, prepare the imitation crab stick by cutting it into small, bite-sized pieces. Finely chop the green onions for garnish.

In a bowl, crack 5 large eggs. Pour in 150ml of warm anchovy-kelp broth. (It’s helpful to have the broth ready beforehand.)

Add 1 tsp of salt and 1 Tbsp of cooking wine to the egg mixture. Gently whisk until just combined, being careful not to create too much foam. For an extra smooth texture, strain the mixture through a fine-mesh sieve 2-3 times.

Now, let’s start cooking. Pour the egg mixture into a small earthenware pot (ttukbaegi). Begin cooking over medium heat, stirring continuously with a spatula, making sure to scrape the bottom of the pot. Keep stirring until the egg mixture starts to form soft curds.

Once the egg mixture begins to form soft curds, reduce the heat to low. Continue to stir gently and cook until the steamed egg is about 80% cooked and puffing up. You’re looking for a state where the edges are slightly set but the center is still moist. Reducing the heat significantly at this stage is key to preventing burning and ensuring a soft texture.

When the steamed egg is about 80% done, evenly sprinkle the chopped imitation crab stick and 2-3 Tbsp of mozzarella cheese over the top. Then, cover the pot with a convex bowl or lid and let it steam for about 2 minutes. This step helps the cheese melt and rise, creating the ‘volcanic explosion’ look.

After 2 minutes, turn off the heat and carefully remove the cover. Place the slice of cheddar cheese on top of the melted cheese, and then sprinkle the chopped green onions generously over it.
