When looking for healthy ingredients for my father who has diabetes, I learned that asparagus is very beneficial. This is a simple stir-fry dish made with asparagus. It’s a nutritious and flavorful meal that’s perfect as a side dish or a light meal.

  • 8 asparagus spears
  • 1/2 onion
  • 1/3 carrot

Wash the fresh asparagus spears thoroughly under running water. You can trim off the tough bottom ends for a more tender bite. Cut them into bite-sized pieces, about 4-5 cm long.

Prepare the onion and carrot to be stir-fried with the asparagus. Slice the onion thinly, and julienne the carrot to a similar thickness as the asparagus. This will create a wonderful texture harmony when cooked.

Heat a pan over medium-low heat and add a moderate amount of cooking oil. First, add the sliced onions and stir-fry until they become translucent. Sautéing the onions well will bring out their natural sweetness, enhancing the overall flavor of the dish.

Once the onions start to turn slightly transparent, add the prepared asparagus and carrots to the pan. Increase the heat to high and stir-fry quickly for 2-3 minutes. It’s important not to overcook the asparagus, as it can become mushy; aim to keep it crisp. Finally, add 1 teaspoon of salt to season and stir-fry briefly until all ingredients are well combined.
